Lazy Man's Low Carb Chili

Meal planning has always been an obstacle for me but if you're serious about getting those chiseled abs you're going to have to jump in the ring at some point. There's really now way around it. Some weeks I'm on point, but for the most part my meal planning really is fly by the seat of my pants.
If you've been following my journey I recently completed the 21 Day Fix Extreme program. What interested me most about this program is the Countdown to Competition meal plan that Autumn (the trainer) herself uses to prepare for a show. That's the knowledge I want! I wanted to know what the pros ACTUALLY do to prepare for a show AND can I do it myself?
For obvious reasons I can't go into detail about the meal plan here but I can say that it called for eight meals a day. Basically, there's no way to hide from meal prep now. I needed simple solutions ESPECIALLY when the inevitable "I wanna quit" comes across my mind.
One solution I found was turkey chili. This stuff is awesome. There's a recipe for it in the back of the meal guide but for me I needed to tweak and modify it to accommodate more RED & GREEN containers instead of it's reds, little greens and little yellows.
So here's my recipe...
Serving size = 1 Cup (approx 1 Red, 1 Green) Makes approx 6 servings
- 1 tsp oil*
- 1-1/2 lbs raw turkey (93% lean or above)
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 habanero, chopped**
- 20 asparagus spears, chopped
- 1-1/2 tsp. ground cumin
- 1 Tbsp. chili powder
- 1/2 tsp. Himalayan Salt
- 1/2 tsp. cayenne pepper**
- 1 (15oz) can all-natural diced tomatoes in juice, no sugar added***
* Make sure to use Fix approved items if you're on the program
** I prefer my chili spicy, use less if you're not into spicy food
*** This was tough for me to pick out because there's so many options. I looked for the can that had the lowest sodium, lowest sugar, organic if possible and least amount of ingredients.
Directions...
- Heat oil in large sauce plan.
- Add turkey, onion, pepper and asparagus and cook until turkey is no longer pink (approx 6-8 min)
- Add spices and habanero. Stir for 1 minute
- Add in can of diced tomatoes (with juice) and bring to boil. Reduce heat to low and stir occasionally for 15-20 min.
- Dash with anything else you like and enjoy.
That's it! This was so nice to keep around for a quick microwavable meal and it was a nice twist from all the fish you'll most likely be eating.
