NEW Egg Muffin Recipe

Eggs are one of my favorite meals and snacks so I'm always looking for new ways to spruce them up a bit. When I found this idea online I just had to try it and now that I have I wanted to share it with you all too. Actually I literally drove to my grocery store to buy a muffin pan because I didn't have one. LOL.
My favorite egg snack still remains deviled eggs with hummus and hot sauce but this is definitely coming in 2nd place but 1st place when it comes to ease and speed. The recipe I originally found made these little egg pucks into egg muffin sandwiches but they also work great alone. Whatever works best for you.

Spray muffin pan with non-stick spray. I didn't have any non-stick spray so I poured some coconut oil into one of the spots then took a paper towel and soaked up the oil and spread it into all the other ones.

Crack an egg into each of the muffin spots.

Add any ingredients and spices you want here. I broke up some spinach into these but some there great ideas would be chopped onions, kale, bacon bits (if you're naughty) or anything else. Get creative here.
Optional: The single egg didn't fill the muffin spot up very much so I poured in some liquid eggs whites over the top. Protein, protein, protein!

Place in oven at 350 degrees for 15-20 min.

Enjoy and store the rest. I added some hot sauce and sometimes I'll even sprinkle some cheese over the tops of these.
